The mission of the UIW Nutrition Program is to prepare professionals committed to providing nutrition and dietetic services to improve the health and well-being of individuals and groups.  One of the missions of the Air Force Dietitians Association (AFDA) is the preservation of Air Force Dietetics history. Locating the archive at the UIW will enhance the Nutrition Program and Didactic Program in Dietetics at UIW through preserving the unique contributions of AF dietetics to the advancement of the dietetics profession. 

The archive is a highly specialized resource that will be of great value to UIW’s dietetic interns and nutrition students, as well as the Military Internship Consortium and all dietetic interns in San Antonio.  Air Force dietitians have played a significant role in research in clinical and cost-effectiveness of medical nutrition therapy, air and space nutrition, aeromedical patient evacuation, patient feeding during disasters and wartime, training and education of dietetic support personnel and dietetic interns, hospital food service design, staffing and contracting, the specialized evaluation and dedicated care of former-POWs (Prisoners of War), numerous community health and wellness programs and research and medical education.  Air Force Dietitians have served in such diverse places as Japan, the Philippines, Korea, Okinawa, Vietnam and Thailand, Europe, Afghanistan and the Middle East.
